Thanks to the careful tending of the RK crew and our guests (some even weeded!), our vegetable garden is starting to produce beautifully! We have loads of tomatoes, zucchini, eggplant and peppers, all ready to come into our kitchen. We have learned many tips, such as picking tomatoes before they are totally ripe, and letting them sit in cartons until they are tender and juicy was much more effective than having them ripen on the vine.
We also had to be careful to harvest the zucchini before they exploded into giant squash virtually overnight. Despite some mishaps we have done pretty well, and have the recipes to prove it!
We have run out of ideas on what to do with the green peppers that we have coming out of our ears, any ideas from our readers? Leave a comment and we’ll give it a try!!
